Lecture sessions are designed to provide the most useful information from transformation of traditional product from a scratch basis to prepared mix basis. It will cover ingredients, equipment, blending procedures, application of prepared mixes and planning for a blending plant.
There is a mini laboratory scale ribbon blender for our practical classes. Practical sessions are designed to reinforce our lecture sessions and also to provide starting formulations for yeast raised and chemical leavened products. Special emphasis will be given to designing your own bread improvers and chemical leavening system for different products.
