Bread Science Short Course (20000 Baht)

  Course Outline

The Bread Science Short Course is a two-week intensive course designed to provide advanced
bread science training for professional bakers and other personnel directly involved in the
baking industry.
The course curriculum is divided into lecture and laboratory work sessions. The lecture
sessions covers bread and some baker mathematics. These lectures include functions of
ingredients, formulation construction and balancing, mixing, make-up and baking procedures.
The laboratory work sessions covers experimental baking of bread and laminated yeast raised
pastries as well as production of other variety breads. These sessions put into practice the
lectures that have been covered and includes product evaluation after baking.
Written examinations are given twice during the two-week period and a certificate of
completion is awarded to students who satisfactory meet the requirements of the course.
